5 Ridiculously Easy Baking Ideas for Lazy University Students

RICE COOKER

The following recipes are cooked in your rice cooker. Yes, that’s right! They are so easy to make that you can whip it up in no time. What's not to love?

#1 Butter Cake

Serves: 6 | Prep: 10 mins | Cook: 30 mins (Recipe adapted from Kidspot)

Ingredients

  • 20 tbsp (300g) self-raising flour

  • 2 tbsp white sugar

  • 2 eggs, lightly beaten

  • 25 tbsp (375ml) milk

Instructions

  1. Place flour, sugar and eggs into a bowl and whisk together while adding milk at a little at a time until all ingredients are mixed well.

  2. Pour cake mixture into the rice cooker and set it to cook.

  3. Cook until a skewer inserted into the cake comes out clean. This should take around 20-25 minutes.

  4. Serve with ice cream or honey.

#2 Yogurt Cheesecake

Serves: 6 | Prep: 10 mins | Cook: 30 mins (Recipe adapted from Rachis)

Ingredients

  • 10 tbsp (150g) pancake mix

  • 5 tbsp white sugar

  • 2 eggs

  • 400g plain yogurt

  • 2 tbsp grated cheese

Instructions

  1. Mix the eggs and sugar together.

  2. Add the yogurt and mix well.

  3. Add the grated cheese and pancake mix.

  4. Mix well so that the mixture is not lumpy.

  5. Pour the batter into the rice cooker.

  6. Tap it gently to remove bubbles.

  7. Pour cake mixture into the bowl of a rice cooker and set it to cook.

Notes

  • Don't open the lid of the rice cooker while it is cooking.

  • If your rice cooker does not have a non-stick coating, give it a spray of cooking oil.

  • Cook until a skewer inserted into the cake comes out clean. Otherwise, push the button down to cook again. This should take around 20-25 minutes.

Ah, the electric toaster: a perfect tool for making… toast? While these miniature ovens do produce perfectly toasted bread, they can do a whole lot more. Here’s how to use your toaster for more than just toast.

#1 Chocolate Chip Cookies

Serves: 2 | Prep: 5 mins | Cook: 10 mins (Recipe adapted from Michele Parvizi of msbelly)

Ingredients

  • 1/4 cup all purpose flour

  • 3 tbsp sugar

  • 1 egg yolk

  • ¼ tsp baking soda

  • 2 tbsp chocolate chips

  • ¼ tsp vanilla essence

  • 2 tbsp melted butter

  • 1 pinch salt

Instructions

  1. Preheat toaster oven to 170℃.

  2. Mash together softened butter, sugar, salt and vanilla with a fork.

  3. Add the egg yolk, baking soda and flour and keep stirring until it’s all well-combined.

  4. Add the chocolate chips.

  5. Form two balls of cookie dough evenly spaced apart on a pan and sprinkle with salt.

  6. Bake at 170℃ for 10-15 minutes.

MICROWAVE

Believe it or not, you can do so much more with a microwave than you can think of. Here are some easy-peasy recipes any microwave aficionado can cook up in a jiffy.

#1 Nutella Mug Cake

Serves: 1 | Prep: 3 mins | Cook 2 mins (Recipe adapted from Angie McGowan)

Ingredients

  • 4 tbsp self-raising flour

  • 4 tbsp white sugar

  • 1 egg

  • 3 tbsp milk

  • 3 tbsp cocoa powder

  • 3 tbsp Nutella

  • 3 tbsp vegetable oil

Instructions

  1. Place all ingredients into a mug and whisk well with a fork until smooth.

  2. Microwave on high for 1 - 2 minutes.

#2 Nescafe Mug Cake

Ingredients

  • 4 tbsp flour

  • 2 tbsp sugar

  • ¼ tsp baking powder

  • 3 tbsp milk

  • 1 sachet Nescafe powder

  • 3 tbsp vegetable oil

Instructions

  1. Place all ingredients into a mug and whisk well with a fork until smooth.

  2. Microwave on high for 1 - 2 minutes.

  3. Top with whipped cream and chocolate syrup. Enjoy!

Notes

  • Cook until a skewer inserted into the cake comes out clean. Otherwise, pop it back into the microwave for another 10 seconds.
